Sieves

I'm grinding in a Golden Grain stone grist mill using white wheat and corn for grits and cornmeal.  The cornmeal comes out just fine without sifting but I want to sift the finer particles (cornmeal!) out of my grits  and to try sifting some of

the bran out of my wheat flour.  I've been reading about Proth5's sieves of various sizes and wondering which ones will be most useful and where to get them.   Suggestions?

If you want to know where I got them - I use Keene 14" soil classifiers that I got from www.lmine.com

I like to do a very finely ground flour - with bran remilled so that is finer than what you find in typical whole wheat flours.  For my purposes a 12 mesh (or it might be a 20 mesh - I cannot check right now and I always space on that one) and a 50 mesh are the ones that I use most.  I have used as fine as a 100 mesh which makes a lovely, luxury flour.

The Keene classifiers are about $23 per sieve  (slightly less if you buy more than 6) so depending on your milling budget, you may want to try a few sizes to get the ideal for your style of milling.

Various references put the dividing screen size between corn grits and cornmeal at #16 down to #26.  I use #20.  You can get used test sieves on ebay.
