there is a good variety of decent bread in oslo. try the shop/coffee in grunerlokka area, its called "good bread", in norwegian,
" godt brød" its in the street thv.meyersgt. the tram passes by there. but im sure you will find other good shops when strolling in the city!
I will certainly visit these place this coming November.
The Economist's lifestyle magazine "Intelligent Life" had a good article about Oslo a couple of months back. It also praises ÅpentBakeri. It's good reading http://moreintelligentlife.com/content/places/oslo-takes-a-year?page=full
