Baking Time if I increase loaf size?
I know this is probably a simple answer but wanted to ask anyway. Instead of baking one regular Tartine loaf, I'm increasing it by .5 so that I'll have a bigger loaf. I usually bake 25 min in a covered dutch oven and then uncovered for another 20. I know I need to increase the baking time and can check temperature to make sure it's done but should I bake covered for 37 (or so) minutes? Thanks.





The purpose of baking covered is to have a humid environment until crust starts to form. That is not changed with a larger loaf. I would increase the bake time for the uncovered portion of the bake. Also, I would decrease the oven temperature so the longer bake time doesn't result in the crust being darker than you want it - maybe by 20 dF. For a 1.5 kg loaf, I'd guess a total bake time of 55-60 minutes, but it would be best to check the internal temperature of the loaf to judge when it's fully baked starting at about 50 minutes.
