i want to be able to scale my cookie dough volume from one cookie to one hundred if necessary.
and in grams per cookie, such as 3.5 oz is 99grams???

I am not certain that I understand your question but if you have a recipe, weigh all of the ingredients in grams to get the total weight. Divide that weight by the yield to get the prebaked grams per cookies. For example if your total recipe weight is 1000 grams and it makes 20 cookies, 1000 divided by 20= 50 grams per cookies pre baked weight. From there you can increase your recipe up or down as you like; 500 grams=10 cookies, 2000 grams= 40 cookies. Or, once you know the weight of the recipe you can alter the scale weight of each cookie to change the number of cookies in the batch. I hope that I have answered your question.
