Pretzel Roll P&J and Grilled Chicken Lunch with Pickles

We have been eating lunch well the last day or two with our last Pretzel Roll bake for sandwiches - P and J and Baja Grilled Chicken with Grilled Veggies.  The J is caramelized Minneola Marmalade.  There is part of a croissant, some nice red pepper hummus, cucumber salad and fruits and veggies of all kinds.  All very healthy and my assistant cleaned herself up for a photo with her new bow!

Baja Grilled Chicken, squash and eggplant and some new Kosher Dill Pickles - Medium Hot.

for 1# of meat or fish - enough meat for two.  Chicken, pork or beef you can do for 14 hours (fish 1  hour is enough).  Most folks don't know the fine cooks in the Baja use soy sauce and Lee and Perrins, of all things, in their marinades for flavor and salt.

1 T each; light salt soy,  worchestishire and Tequila ( forgot the Tequila - so un-Brownman like)

Juice of 1 lime

1/2 tsp each; onion powder, garlic powder, Mexican oregano and epizote (dried or fresh), sugar, smoked paprika

1/4 tsp each chili powders; arbol, chipotle, ancho, guajillo, negro

1 T olive oil

1 T chopped fresh cilantro

pepper to taste

Thanks for the recipe.  I shall certainly have to try this one.  Sounds like it is not for the feint of heart or people who don't like a little or a lot of spice in their life!

  Your foods look awesome as usual but what caught my eye is your Pretzel roll! Is it store bought or did you make it yourself. If you do, can you share the recipe? The crumb shot looks wonderful.

The are fake pretzel and made with Yeast Water for the starter.  When I made them again I will put the fine pretzel  breadcrumbs in the dough itself rather than on teh outside .  These rolls are just yummy.  Used them in french bread,  toast, sandwiches ....

I'm not sure they can be made with SD or comercial yeast.  YW makes for a very moist and unique crumb hard to reproduce  with other leavens.
