Thank you for sharing the German recipes. I cannot get edelhefe in my town, so do I just add more yeast? My instant yeast recommends using 2 teaspoons per 5oo gms of flour.

Hi Abigail,

No, you shouldn't add more instant yeast. The nutritional yeast flakes are an inactive yeast product that doesn't raise the bread at all. Nutritional yeast flakes are a flavor contributor - it has a cheesy, nutty flavor, and it is a nutritional element of the bread also. You should be able to find nutritional yeast flakes on the internet, which is how I did it. For example, I notice that they are available from Bob's Red Mill, which also sells flours over the internet. A number of brands are available on amazon.com also, including KAL, which I used. Search for "nutritional yeast flakes" or "yeast flakes". It is not brewer's yeast, and it is not any kind of active yeast one would use for fermentation. You may well be able to find them at a health food store if there is one in your area.

I think the bread would still be quite good without them, but the flavor would be different.
