Sourdough beginner question
I am new to baking and sourdough. I have a pretty vigorous starter going that I raised from a KAF starter that I am maintaining at 100% hydration. I have successfully used it for a few recipes from the KAF website. I really want to branch out and hae been reading the sourdough section in Rose Levy Beranbaum's Bread Bible that has some great recipes. However, her insructions are super-detailed and comprise way more stages than my "discard-feed-use-refeed" cycle. I could use some advice on how/where to "plug in" my fed starter to her recipes. Thanks!
