Anyone know of any great ones?
My son used to work for Uptown where Didier Rosada is the head baker. Didier used to be chief instructor at SFBI and the coach of the First Place winning USA team at the Coupe du Monda du Boulerange (sp?). They make very good stuff but not perfect since it is really designed to be a wholesale production, yet artisinal, bakery. You can buy their stuff all around DC in better food stores.
