Hi - I'm new here, but one thing I've always been very successful at is over-cooking flat breads. How warm is the griddle? I'm going to have to try this... Thanks!
Hi,
I heat my pan or griddle iron over high heat. then I adjust the heat after making the first one to medium heat.

I made it last night. I milled 300g hard white wheat & 150g soft wheat, and it turned out really good! Much better than my last attempt which ruined a pan over too high of heat... I only used medium heat this time (and, I presume, a better quality pan). I made the dough ahead of time and knocked it down when I was ready to make the flats.
I had one as a wrap again today for lunch and it was still pretty good & flexible.
This recipe is going to be a keeper. Thanks!
You're welcome,I'm glad it worked well for you :)

Made them last night to accompany lamb tagine and couscous - fantastic! We liked them so much, the kids have asked me to make them again today. Thanks so much for an excellent recipe.
I made them for guests last night and they were exactly what I was looking for. I served them with grilled butterflied leg of lamb, yogurt sauce, tomatoes, and zucchini. I baked them right on the grill and they came out soft and pliable and very tasty!
