hamburger buns, anyone?

What recipe would you consider the most like GULP "store bought hamburger buns". One of the variations in the BBA? I have not tried those. Challah maybe? It is the recipe I am most comfortable with.

The kaiser rolls in the BBA are awesome.  Definitely great for burgers!  Soft and squishy on the inside.

I had been eye-ing those rolls ever since I got that book! I did the biga after seeing your reply. Thank you. I'll post the results tomorrow!

 These are the ones I make, I use my regular white bread recipe but milk instead of water, and a little extra butter. qahtan

Where did you get the formula. Was it on here or in a book? I'd like to try those as well. I have the BBA, but thats it so far, yea I know, but it's about to change. Money is tight, but for whatever reason it just dawned on me about the Amazon.com used books. Where have I been? I have 2 little ones at home and sometimes if it's not a childrens something, it get's by me. Thank you for the reply, and if you have time I'd love the recipe.

You may want to take a look at my "A Hamburger Bun" blog entry at http://www.thefreshloaf.com/node/2627/hamburger-bun. I think it's a fairly ordinary hamburger bun, similar to store-bought, except that it holds the juice better without falling apart and tastes better, at least according to my kids.

I will definately do those. I'm on the kaiser ones now, well, the biga is working. And we will probably cook out this weekend, and also with kids, buns are always on hand. As I wrote in on out takes a while ago, I needed a good bun recipe. The neighbor hood kids think we're the weird parents that can't buy store bought bread even, and that our bread sometimes has "Horse Feed" on it even.( grains and oats I assume) So if your kids give it the thumbs up that makes it a good recipe. I really want to get off the neighborhood "weird list"!! My oldest will start school this year and I fear I'm doomed! I used to be so popular, now I'm a nerd. Go figure. Thank you for the recipe and photos. I'll post all these bun results soon.

Good luck with the buns.

My ten year old boy took nearly an entire loaf of my miche, which has a lot of whole grain in it, and fed it to the birds and the deer, in one of his fits of enthusiasm and love for animals. He showed no remorse, not even any slight concern, about the need for them to have this nourishment that from his perspective was clearly perfectly designed for the animals and not for him. My 13 year old boy will happily take that same miche and make ham and cheese melts with great delight. He says it's his favorite bread. My 14 year old daughter won't touch the miche, but my 16 year old boy sneaks multiple slices a day whenever there is some on the counter. They all relish the burger buns, ciabatta, and anything approximating the BBA basic sourdough, especially when freshly baked. So I know what you mean about the varying bread tastes of those darn kids. My experience is that some of them will eventually decide that "horsefeed" is good for humans too.

Emily will take any tool she can get her hands on to dig out holes from a fresh hot loaf of bread as soon as it is almost warm to the touch, but she won't eat CHOCOLATE. Quaid is afraid of bananas. He is 15 months. And LOVES garlic toast. The more garlic the better. I'll never figure them out. Love the deer story! Sunday while I was gone to get bird seed, they decided to give them ( the birds) a pound or two of my shelled pecans, THAT I SHELLED. They were not plentiful this year here and in the south, we eat a pecans in most things that require nuts. In the store they are $8.95/lb. The 20 lb. of bird seed was $8.97. They fed those birds $18. worth of pecans, because they couldn't wait for me to get back from a 5 mile trip. I feel your pain. Your miche must be Yummy!  Did it come from the BBA or BB maybe?

Good stories - worse to lose pecans than a miche.

The Miche is close to the Mixed Flour Miche in Bread by Hamelman, other than my messing w/flour and playing with increased hydration. I started by making the miche in the BBA, and it has similarities to that too.
