Hello bakers.  Been lurking here for a while, and finally plunging in.  I started attempting my own bread baking about 2 years ago, when I got tired of the lousy quality of breads available at local stores.  It becomes addicting, and once I started studying it, and learning more and more, and producing better loaves, it gets more addicting :)  I hope to continue learning from the folks here, and baking better bread!

And welcome to TFL!  It's a great place to learn from others and to share your learnings.  I hope to see more posts from you.

I couldn't subject my poor German stomach the local "wonderbreads" in Maine.

Welcome to TFL,

All of what you say sounds so familiar to all of us. I love good food, and founbd that my partner and would rather stay at home many nights and cook for ourselves because typical restaurant fare is good, we could do better. This also goes for baked goods as well. I roast my own coffee for the same reasons. Maria loves it, and I also roast for her 91 year old mother.

Welcome to the forum.  I also got tired of tasteless store bread. I just got started baking breads, to the point of doing my first yesterday. I probably have made some mistakes, but even with those mistakes the taste and consistency of that bread is so superior to anything from the supermarket. This is also why I roast my own coffee (as well as for my partner and her 91 year old mother) and am just looking into making my own sausage.

What type of sausage are you contemplating?  I'm looking for a hot italian sausage recipe to try.  I found a few but am not sure what one to try.  I cannot get the hot italian sausage that I was used to in NY down here in GA.  I'm used to Garafolo's sausage.  Once you get used to something it's hard to find a replacement.

I still need to get a stuffer before I can begin making the sausages. When I do I will start with some rather simple ones, if there are such ones.
