Peter Reinharts focaccia

We made a focaccia bread using a recipe out of "The Bread Baker's Apprentice". It smells amazing, we will eat lasagna and focaccia for lunch. We topped it with fried mushrooms, cheddar, mozzarella, feta and sea salt flakes.

What a beautiful, foccacia

Delicious choice of toppings.  How about a crumb shot.  If there is any left?

The toppings were kind of chosen for us by what we had in the fridge.  Here is a shot of the crumb, I think what I would change for next time is cut the amount of olive oil on the top in 1/2 but otherwise we were pleased with the taste and texture.
