I freeze

My regular artisan rye bread by wrapping it in freezer paper, and then in a plastic bag with tied end.  When I need it, I take it out and put it in the oven for  10-15 mins.  I have no idea how long bread can be kept.

I wrap all of my artisan

I wrap all of my artisan breads, including NYT no-knead, in foil.

No idea just how long it will last. The longest I have kept frozen so far is several weeks. I noted no deterioration in quality.

I freeze often

I make 2 loaves of Daily Bread every weekend- I keep 1 fresh and freeze one right away... I wrap it in Glad Press n' Seal (the kind designed for the freezer). When I want to eat it, I leave it out overnight. Keeps it very fresh.
