Pigs in blankets

I make my own sausage and I bake my own bread. The other day My wife asked If I could make pigs in blankets with some of my sausage mix.

I made a 25 percent whole grain dough using whole wheat and rye in equal parts. I refrigerated the dough over night because it is easier to roll out thinly when it is cold. I made an Italian sausage mix and extruded it without casing it and wrapped it in a single layer of dough and sealed the join and cut it free with a pizza wheel.

Nut pick shows scale.

Dinner fork shows scale.

The sausage bakes when the bread bakes. It is a meat product so it must be refrigerated and is best when heated.

...does it take for that bit of bread to bake?  I'd feel safer at least partially cooking the sausage first.

Twenty minutes . The meat temperature is 195 F by instant thermometer.

Where's the greasiness? No sogginess around the cooked meat...amazing!  A little mustard for dipping...yum.

 I control the fat content to less than 20 percent of the total sausage mix. Remember that these are only about the size of a finger. Therefore there isn't much fat.

Hey - I think my wife has been looking for that fork.  Well, it matches her set anyway ;>)

Did she lose one in Bangor, Maine in 1958 ? That's when we got those.  I don't know why the nut pick was on the table. Maybe I was cleaning my finger nails. ;)

Never been to Maine, let alone Bangor.  But the time period is about right for when she bought her set.  We still use it every day.

I've been working up the nerve to make pigs in blankets with my own sausage for a while, but I've never been quite sure about whether the sausage will cook up with the bread or if one will cook significantly faster than the other.

I think it's time to give this a shot.
