Rye Flour question for Pierre's Rustic recipe
I have some organic rye flour that I bought some time ago from a health food store and it was only labeled "oraginc rye flour". It is light in color aand you can see flecks of bran in it. Would this be considered whole rye? I want to attempt the Pierre's Rustic recipe and wonder if I could use this flour as my portion of rye. I just converted my 100% starter to 67% by adding some of this rye flour . Thanks for the input!
