Glad you enjoyed the shaped rolls! The eyes are whole cloves. We experimented to get the crab shape and found that snipping with scissors works best. It is just a roll sized piece of punched down dough snipped and bent to get legs and claws- not really sculpted as such. It requires a minimum of handling so the bread remains really nice.
I must confess that my grand-daughter Bronwyn (age 7) made this example; one of six dozen she made for a big seafood cookout. By the way, Bronwyn is a huge fan of Jake. I'm glad to report that he is well!
My 3 attempted rolls resembled large weevils which you might find more disturbing.
