Back Home Bakery

I spent another 10 days at [Professor] Mark's The Back Home Bakery. Other then working hard I had a great time up in the Rockies and enjoyed my time with Mark and his wife Sharon very much. It was great to see how he was able to organize his process to multiply his output and meet the demand of his divers clientele. I was not surprised that we sold out at all three Farmer's Market I participated.

I leave it up to you to decide if I learned something!!

Thanks Sharon and Mark for you hospitality!

Those blooms look like bicep muscles flexing out.   :)    Excellent crumb too.   Great job!

Glad to see that those at home are able to sample some of the breads that you practiced here.  Thanks for the help on those early mornings and I'll be thinking of you in about 6 hours when I tackle 18 dozen rolls tomorrow morning all by myself while Sharon is busy with the pastries.

Thanks Mark,

I will blink with my eyes at 1am and my both hands will start shaping rolls as I turn over and dream of another sold out Kalispell Famer's market. Sorry for not being able to be there and help.

Wow Thomas!

Great loaves! And what a privilege to work with the Maestro in person. If only I would live a little closer!

Well you are right and Amsterdam is really not around the corner, but maybe you can convince a dutch baker to offer internships for home bakers.

Godd luck!!

Thanks Michelle, and you are right, it is so different to learn when a pro watches over your shoulder.

Hello Thaomas:

I am envious of  anyone who has a chance to work with Mark at the Backhome Bakery!  I read the invitation from Mark early on in the year and sorely tempted but I am too old and may not have the energy to put out the works it needed and also it is a bit far from my home in VA.

I wish that I could do some apprentice work somewhere closeby and that I were ten years younger!  Sigh!

Your bread is awesome by the way.

Thanks mantana,

After you ignore the first invite from AARP, we all wish to be 10 years younger.... and without testing it you never know if you would have had the energy or not. (Just my simple philosophy)

Believe me I didn't know what to expect when I first landed in Kalispell, but now I know!
