Thanx, Andy, for the link to http://sourdough.com/blog/tasting-bread, a much needed paean to TASTE in bread.  We stuggle for the chew, the loft, the holes, the crust but taste is all important!

while reading it, I flashed on the egg salad sandwich I had yesterday (bought at the grocery store out of sheer desparation, I was starving) I shared this over priced piece of crap with my husband. It had a ton of lettuce in it, white bread sliced an inch thick and a glob of bland egg salad dumped in the middle and topped with the other slice of bread. NO TASTE, and very little resemblance to a sandwich. The lettuce while ok, was a tad wilted, the bread was totally bland and way too thick for my tastes (chewed up like glue and was about as bad trying to swallow it) and the egg salad was totally saltless, not a bit of taste egg or otherwise, and it was a gyp, the egg was only in the middle of the bread, none to the edges and trying to eat that glop they called bread was terrible. I ate the middle and left the crusts, (I really don't like gagging in public when the bread balls up in my mouth, and no pickles) but what I can't get over is the fact that this mess cost over $4 for one sandwich! UGH!

My mother made delicious egg salad sandwiches, a little mustard, some lemon juice, some butter and all mixed with the chopped eggs, and of course salt and pepper. The bread was carefully buttered to the edges, and no one insulted the eggs by adding lettuce wilted or unwilted! For me she had to slice the bread very thin, and in later years we used mayo instead of butter to hold the eggs together, but NEVER did it not have flavour from the bread, from the eggs, and from the salt and pepper and mustard and lemon juice!

I can't eat bread from the bakery in the stores anymore, its not got any taste, is underbaked, and I'd have to have a jar of pickles to get down one slice! LOL
