Sourdough Seed Bread

Hi everyone! Here is one of my latest "creations". I'm very very pleased with the "look" the "taste", the "smell", the "everything". The loaf filled the house with its aroma, I could sniff it from the other room. I followed Hamelman's instructions, only I didn't toast the seeds in the oven, but in a frying pan. I did 2 S -F at 50 min interval, and retarded the dough in the fridge for 10 hours.

I don't have a banneton and I also prefer to shape the loafs in a free form, rather than bowls. My improvised box worked very good. It was the first time I used that.

Great idea to place the bread in the bag for support....!  Do you cut the bag to transfer the loaf?

I think this formula of Hamelman's is one that many members of TFL have really enjoyed making more than most.

Sylvia, I didn't cut the bag, I manage somehow to flip it. Since then I think I improved my method, I made a semi box from thick cardboard, without the two small sides. The large sides can be swung (or swing, I don't now the proper word). If it works better, I'll let you all know. Anyway, the paper bag was a huge help, easy to move from table to fridge and viceversa, I only wondered "Why didn't I thought of it before??!!"
