Hi all...I just joined!

I love baking yeast breads of all kinds, there is just something about the feel of the dough, kneading, creating, shaping and slowing down to relax while waiting for it to rise. Finally getting it into the oven, smelling the aroma throughout the kitchen and at last getting to share a fresh hot slice with others…it is all fun and somewhat therapeutic for me.....I am looking forward to sharing and learning with you all, but I will first need to find my way around the site!

There's a ton of info here to chew on. Learn to use the search box in the upper left and dig in. What book(s) are you using? Any original recipes you've come up with? Do you measure or scale? Does your chewing gum lose it's flavor on the bedpost overnite? {:-))

Hmmm, as far as books, I don’t own any of the great recommended bread books, I do rely on the online sources...such as this site for learning/tips/ideas. When I first starting baking breads, besides a couple OLD (unknown) bread books - handed down, I relied on a King Arthur cookbook, Cooks Illustrated articles and loved watching all the PBS bread shows. My bread baking method is always to follow a new recipe to a “T”, understand the whats & whys, then once I am comfortable with that, I usually experiment to create a recipe of my own...lots of testing.

I measure my ingredients,  however, I scale the raw dough if I want equal portioned buns..someimes I eyeball.
