New Loaves Today - WIP!

Hi all!

I've had the craving for baking some bread for days now, but unfortunately had a cold and wasn't feeling up to much of anything apart from sitting on the sofa with some Lemsip and a DVR full of bad telly.

Anyhoo, I'm in much better condition today, and currently have 1KG of dough proofing.  Meanwhile, I thought I'd share the pics of the work in progress.

You've got a nice smooth dough there. What's the formula? How long did you knead it?

1kg flour
20g salt (I reduce this by 50%)
10g yeast (I use about 1.25tbs re-activated yeast)
water

I knead for about ten min.

My loaves rose beautifully!  Very pillowy soft and felt absolutely perfect.

 

But they stuck to the chopping boards quite a bit, despite the generous dusting of flour I thought I'd given.  Obviously not enough!

:-(

Perhaps this is a sign it's time to invest in a peel?  I'm very nervous about how they'll turn out...but they're in th'oven now!

...was not as bad as I feared, nor as good as I have previously fared.  Never mind!  The taste is all that really matters and that is outstanding.

I'd say the end result at leat looks fabulous and I bet it taste fabulous too........thanks for sharing your pictures.

Just polished off the first loaf with some soup!

I bet that the soup and your bread made you feel better than all the Lemsip.  The bread looks great.

for the pics!  I've been wanting to try out some step-by-step pics for awhile now...or even a vid.  But these give some idea as to shaping, which is often tricky.
