Hi! My name is Jim and I'm thrilled to have found this "one stop shopping" site. I've done a LOT of high end home cooking over many years but bread baking has always been something of an afterthought for the very thing required to do it successfully...you have to measure everything. Not to mention Acme bread is available in a number of local stores. I'm at a point where I wanted to shore up this weakness and this forum has helped me improve by leaps and bounds in two weeks. I just finished a three day odyssey that produced the best bread I've ever made.
