Preserving pre-baked bottoms with tomate-sauce.

Hello,

I wonder if their would be any hygienic problems with this:

Pre-baking the pizza-bottoms with tomate-sauce on it. Baked untill sauce is dry.

Keeping these bottoms, when cooled off, in a sealed bag and using them the next day.

One day storage in sealed bags at room temperature of dried tomato sauce is probably safe.  Tomato sauce is acid and most bacteria do not like that environment.
