ABAA (Ponsford Glezer) forumla--used levain for biga:

ABAA ciabatta made with instant yeast biga (sorry no crumb shot):

NYT no knead formula, shaped into ciabattas instead of baked in a pot. I liked the crumb but not the texture/flavor---too wet and rubbery.

My favorite ciabatta shot--second time I used the mud oven and it was the crumb I had always dreamed of! I think this was my poolish version formula from a class...but it's been a while. Also I think there was some luck involved here, ha ha:
