Yeasty Soft Dinner Rolls

Good morning and happy holidays to all.


I have just started making my own bread, and I have made three or four loaves and a pan of dinner rolls, and they all came out pretty good.  I made the dough in my food processor and then let it rise according to instructions.  BUT,  the the bread is too dense and crust is too thick and hard for my particular liking.  I was wondering if anybody here has a recipe that would yield a semi dense, yeasty soft  dinner roll.  Tonight,  I'm making puttanesca with homemade noodles and hopefully some great homemade dinner rolls.

Try these. There are dozens of yeast roll recipes on the web. I imagine those with the higher oil content, like the first one to be elaborated on in the thread linked below, will maybe have the texture you are looking for. Also in keeping with the texture you want, try AP flours in the 10 - 10.5 % protein rather than higher protein AP and bread flours.

For those who might want a fluffier texture, try those that include eggs, and maybe a little less oil/fat.

Thank you for the link, it was wonderful.  That was the exact kind of bread I was looking for.  I made it last night and it turned out perfectly.  Heavy, damp, yeastie,  and perfect for soaking up homemade puttanesca.
