Flour amount DLX

I have a DLX and I am just curious as to a maximum amount of flour for mixing bread adequately using it???? I have done as many as four loaves at once.  I have a recipe that will be requiring at least 11 cups of white bread flour.

I finally found a seasoned bread I want to make for stuffing and I need to make a lot.  I did a dry run in my Compact to see if it had the flavor and texture I was looking for and now I want to get it all made.

I bought my DLX for holiday baking and I have an old family recipe that uses 11 cups flour (among other things). It handles that much fine. It will be a trifle slower mixing than say a Kitchen Aid because of the design, and the KA would need 2 bowls anyway (been there did that for years). Use the dough hook for that much flour. The little roller thing they show in the videos is only good up to 3-4 pounds of dough at most.

Smaxson, thanks so much.  I should be good then.  I usually use the dough hook.  I have just never done quite such a big load.  Terry R.

The mixer is rated at either 10 or 14 pounds of dough, depending on which web site you visit.  I've made batches as large as 10 pounds with no problems.

As to speed, I own a KitchenAid and an Electrolux DLX, and I don't find any real performance difference.  I document that in some videos on my web site.  Look at http://www.sourdoughhome.com/mixerthrowdown.html

I regularly use the roller on the DLX with 8+ lbs of dough. It is a workhorse, even with heavy-on-the-rye loaves.

I do not think Baby will even blink hard at 11 cups white flour. The roller should be fine with it.
