Hi there, I am a pastry student who bakes more sweet desserts than breads, and would like to attempt to make some bread butter pudding. I have some croissants and brioches sitting in the freezer (all hand made), which is more appropriate for the pudding? Thanks!

I would say the
brioches would make a delicious pudding..the croissants would, IMHO be a bit mussy/toughen the pudding and not enough crumb for pudding...but they certainly would make some scrumptious Almond croissants..you could probably even fix up some of the pudding used in the Bpudding to accommodate the almond meal used in the filling for the almond croissants, I even like a little cake crumb mixed in...when making a bread pudding you need the bread to act as a sponge to absorb the pudding, bed puddings are a lot of times made with day old bread or even lightly toasted..I also don't add a lot of the dark crust, some is nice.

Wow that was quick! Thanks Sylvia, your tips are very helpful. Funny how some of the simplest dishes require more thought than you'd expect. I'll be making some BBPudding as a Birthday request, and will let you know how it comes out. :)

Mmm...bread butter pudding... Have you tried Om Ali before? It is a Middle Eastern version of BBP with pistachio, saffron, cinnamon, and tastes absolutely divine!
I may throw some sultanas into my BBP, Birthday boy's request.

Yes. She throws stuff together better than anybody. And that cream was so thick, it was a downright sin. Luckily, I don't even think about buying stuff like that(cant afford it), and light cream or milk will probably work just as well.
I can't imagine
how anyone can eat a large bowl of that sinfully scrumptuous pudding just before bedtime!!
