Soft, fluffy, 100% whole wheat

Readers are often requesting recipes for soft, fluffy, 100% whole wheat sandwich bread.  I have found the one the foots the bill for our family.

I found the recipe at http://www.everydayhomemaking.com/recipes/DLX_bread_recipe.html Vicki has also posted some great pictures of her process.  Of course, one does not need to have a DLX to make the bread and I often use my Bosch compact. 

I grind my own white whole wheat for this recipe.  I also add two Tbls. of my own dough enhancer and do not add the liquid lecithin.  I use dried buttermilk instead of plain milk powder. 

With the addition of one egg, this same recipe makes the lightest, fluffiest, sweet rolls.

Dough enhancer:  1 cup lecithin granules, 1/2 Tbl. vitamin C powder, 1/2 Tbl. ginger

The first time I made it, I was completely amazed at the rise of the bread.  The flavor is great.  Just follow her directions carefully and, as always, do not be tempted to add too much flour.  Terry

100% WW wonder bread made at home... hmm sounds tempting. i wonder what is the trade off here..

Hmmm!  shouldn't be much of a trade off.  No refined sugar, no white flour, no un natural perservatives, and has olive oil.   It is also very fast bread.

Where can i find soy lecithin granules? the idea is quite inviting, i must give that a tryMill my own white wheat, and i know many who would appreciate a tall healthy loaf.

You can usually find the granules at any health food store.  I also think Bob's Red Mill, or whatever that prepackaged natural food stuff is, also sells bags of it.  Any amish bulk store carries it. 

 

I think you will really like it.  My grandkids always want Grandma's bread for their sandwiches.  Terry
