I've figured out what sourdough and bread really are...

I've been doing a lot of thinking lately, and here's what I've come up with:


Sourdough: A device made from flour and water used for cultivating natural yeast.


Bread: A balloon like device made from usually wheat flour and water used for capturing "yeast farts". 


So based on this definition, bread is a "Yeast Fart Balloon".

Expert: An "ex-" is something that used to be, a has-been. A "spurt" is a drip under pressure. 


Whatever. ;-)

People ask me how yeast works; I tell them that yeasts are single celled plants that eat sugars in dough. Then they burp CO2 and pee alcohol. Crude but true.

Pithy, memorable, but it could be innacurate.  Check out [link]http://www.breadcetera.com/?p=157[/link].  That's where I learned that the excretion of the CO2 isn't done as gas, but as a diffusion into the surrounding water where it only forms bubbles when it hits a saturation point and finds something that can be used for nucleation.


Oh, and I've observed people on this forum getting twitchy about yeasts being described as "plants".
