Burger Buns

Hello everyone,

These buns are from CIA Artisan Breads at Home by Eric W. Kastel.
I replaced some bread flour with whole wheat and topped with sesame seeds.
The egg glaze gave them a nice shine! ...mmm...burgers...can't wait!

Did you use the malt syrup as called for in the recipe? I just bought that book, it looks very good, but a lot of his recipes call for the malt syrup. I'll get some from King Arthur, but have not tried any of his recipes yet. The buns look great.

Hello Jean, Thanks for writing. The buns really were quite tasty. I used Eden Organic Barley Malt Syrup in all of Mr. Kastel's recipes I've tried so far. I hope you enjoy your book! I'm going to buy a copy - I've been baking from one on loan from the library - but it's one I want to add to my "library" here at home! I've got my eye on those Stuffed Pretzel Sticks next...      Regards, breadsong

Hi Breadsong,

I had seen the recipes for the Stuffed Pretzel Sticks, but passed it over. After you mentioned it, I looked it up and they do look great, several choices.

I think I will put that on my list as well, thanks for the suggestion! Jean P.
