My wife and I are planning to open a coffee shop in south Brazil. She is Brasilian and I am an American. We are going to pattern our sandwich area similarly to Subway, then move on to offering artisan breads and other bread products. An eclectic operation. However, I am looking for bread pans which would accommodate the foot long breads. Suggestions? Also, what would be this forum's preference for a bread maker and proofer combination. Thanks!
