What an easy wonderful bread. I went to your blog for your "original " version as I didn't have time to do the soaker. I have been impressed by breads but this one is WAY at the top. Sweet and tender and oh the crust ...it sang and sang. 

Changes I made...I am sorry but time was of the essence. I used my starter which is going " great guns" for the whole levain build . I followed everything else to the letter, well almost. I baked it in a 500 degree cast iron  pot for 30 min, with top on and then 15 min top off. Oh my...it is so pretty. I had to cut it...I'm sorry again. My dear husband had his meatballs ready and my sauce was begging for your bread. more pics of crumb to follow tomorrow. I We sat by the pool with a light rain falling...picture the candles and the sound of the rain  drops on the pool  and the fountain...and the scent of this bread.

And the dinner looks mouth-watering.  This rye has become a favorite of mine in the same way as Hamelman's mixed levain pain au levain is a standard.  Just nice bread, good flavor, nothing fancy.

Thank you Sylvia we do enjoy our outdoor space. It is romantic and last night thank goodness it was a little cooler :)

 

I have more things I want to try Larry from your blog . You do a great job of imparting the info needed to replicate your perfection. Thank you so much. The crumb is simply lovely and the fragrance is so full of the rye . It makes expcellent toast with homemade blueberry jam ! c

We made grilled cheese sandwiches with it today. Cooked very slowly on a Lodge Logic cast iron grill...oh my...melt in the mouth...perfect bread and ready so quickly. I love it. c

that is a great compliment. I appreciate you chiming in. Thank you. I made the SJ sour dough that David revised. Wonderful too. My oven went out again...I quick heated the top oven to 500...transferred the stone and bread from the bottom ...what a testament to sourdough...beautiful breads with great crust and crumb. Photos tomorrow. c

I knew it was Caroline.  I took care of the problem.  Mea Culpa!  My clutch must have momentarily slipped :>)  Anyway, glad you survived an oven malfuntion.  Looking forward to your photos.

Oh that is too funny ! We call it a " senior moment" at our house. We have them ALL too frequently. Found the salad in the plastic box in the drawer...not the fridge ..uh oh. My husband had a little lapse...we laughed and laughed. c
