HELP! My daughter took home a sourdough turtle from the Boudin Bakery on Fisherman's Warf in San Francisco. She wants to save it forever. What do we apply to it to preserve it so it doesn't rot?

One method...
Method 1. Just dry it open on a rack in the room or out in the sun. It will shrink somewhat as it dries. No embalming needed. Varnish when thoroghly dried. Mold likes dark places with no air circulation and high humidity.
Method 2. Embalming. Hollow it out from underneath. Carefully cut out a plug and trim to 1/2 inch thickness. Remove as much of the bread as you can leaving about 1/2 inch of bread under the crust. Eat the pulled out pieces. It will dry faster that way. Now carefully stuff with wadded newspaper so it can hold its shape. Replace the bottom plug. Let dry on a rack. If you notice the newspaper being damp after the first 12 hours, carefully remove and replace with dry paper. With white transparent glue, glue the plug back in and let dry. Varnish the dried turtle to seal it from moisture. Printed newspaper will help deter bugs. It will attract house animals for as long as it exists.
Method 3. Take pictures and eat it before it rots. Share and have a wonderful meal with it before it is too late. Make it a "San Francisco Meal" and talk about the trip. Put the pictures with the ones from the trip to store the memories.
Personally I like the #3 option. It is food. Food should be consumed and enjoyed as food.

The first step is turning off your capslock key, then do any of the things that Mini Oven mentioned.
Take photos of it detailing
Take photos of it detailing the structure, then eat it (Mini's option #3). You can later study the photos and bake your own.
If your daughter really misses it, you can order one online from the Boudin website and surprise her.
Salt dough turtle?
I know your daughter is probably wedded to this particular turtle. However one idea would be to make a turtle together out of dough that is meant to last and can be used for decorative items.

Mini's #3 take a picture, or pictures, be sure to include the one taken by your daughter, and create a vacation scrapbook, or a turtle scrapbook, thereby enjoying the best of both worlds. Ray
