Delicious Whole Wheat Bread With My Zojirushi BBCCX20 Bread Machine

I have a Zoirushi BBCCX20 Bread Machine that I absolutely love and here is my favorite Whole Wheat Recipe that's been tested a lot and never fails me. The reason the Zojirushi BBCCX20 is better at making whole wheat bread in my opinion is because of it's twin kneading blades. It insures the ingredients especially for whole wheat are kneaded thoroughly and that makes all the difference.


Anyways, here is the recipe.

100% Whole Wheat Bread for Bread Machine



-----REGULAR LOAF-----

1 cup Water
2 1/2 cups Wheat bread flour
1 1/4 tablespoons Dry milk
1 teaspoon Salt
1 1/2 tablespoons Butter
1 1/4 tablespoons Honey
1 tablespoon Gluten
2 teaspoons Molasses
1 1/2 teaspoons Fast-Rise yeast *** OR ***
2 teaspoons Active-Dry yeast

-----LARGE LOAF-----

1 1/2 cups + 2 tb Water
3 3/4 cups Wheat bread flour
2 tablespoons Dry milk
1 1/2 teaspoons Salt
2 tablespoons Butter
2 tablespoons Honey
1 1/2 tablespoons Gluten
1 tablespoon Molasses
2 1/8 teaspoons Fast-Rise yeast *** OR ***
3 teaspoons Active-Dry yeast


The trick to making 100% whole wheat bread in your machine is an extra knead,
which gives the yeast and gluten a second chance to create a lighter loaf.

When your first knead cycle is completed, simply reset the machine and start again.
Some manufacturers produce home bakeries with a whole wheat cycle;
if your machine doesn't have one, this start- again method works as an easy
alternative.

SUCCESS HINTS:

The gluten gives the whole wheat flour the structure necessary for a good loaf.
If your market doesn't stock wheat gluten, try your local health food store.
Remember the extra knead. It's especially important in 100% whole wheat bread.
Because of the extra knead, use this recipe only on the regular bake cycle.

looks like a great recipe. do you bake in your bread machine or transfer the dough to your oven.


i have been using my bread machine on the dough cycle & then transfering the dough to different sized bread pans.

Some recipes call for the bread to be baked in the oven but for the most part I bake it right in my machine.

thanks for the recipe. i have a welbilt that has ~ 15 cycles. i do not like the texture of the bread baked in the machine. i use the dough cycle & then bake in my oven or in the gas grill.

Hello there! It's really great to hear that your machine DOES make good bread. I just purchased the new Zoji BB CE-C20; I have four little ones under six and making by hand does not seem feesible right now. What a frustration...Except one white loaf on the basic cycle, none came out good. All multigrain came out collapsed and not cooked! :( I cannot wait to try your recipe! What cycle are you using?! How many hours? Can you please post pictures of your bread? I would love to get some encouragement! Thank you!
