Submitted by cookingetc on March 27, 2010 - 11:05am Special cakes For Peanut Butter LoversHFP Malted Belgian Waffle and Pancake Peanut Butter Lovers Cake I made this cake last Friday and it was quite good, but slightly dry. Today, I perfected it! It is fabulous. A caveat, you must love the taste of peanut butter. Timmy, my friend who walks Bella at night, ate all of his piece of cake on his way home tonight! This cake is very easy to prepare; dump all the ingredients in one bowl and mix thoroughly with a spoon. I would certainly serve this cake for breakfast or brunch, but my first choice is dessert with good, quality ice cream and hot fudge sauce. Yes, if you are going to go wacky...... go all the way! Basic Preparation: Preheat oven to 350 degrees. Bake on center rack. Baking time: 40 to 45 minutes. Spray or butter one 9 inch layer cake pan and dust with sugar. Yield one 9 inch coffee cake. Ingredients: Streusel: 1/3 cup HFP Malted Vanilla Belgian Waffle and Pancake mix 2 tablespoons cold butter 3 tablespoons light brown sugar Cake 2 ½ cups HFP Malted Vanilla Belgian Waffle and Pancake mix ½ cup light brown sugar ½ cup chopped salted peanuts 1 egg 2 tablespoons melted butter 1 cup milk 1 cup peanut butter (I used Jif smooth)
Icing 1 cup powdered sugar 1 teaspoon vanilla 2 tablespoons peanut butter 1 to 2 tablespoons milk 1 tablespoon melted butter 2 tablespoons chopped peanuts (use the peanuts to garnish the cake)
To prepare streusel: Place all ingredients in a bowl. With a pastry cutter or fork, mix until mix is crumbly.
To prepare cake Mix HFP Malted Vanilla Waffle and Pancake mix with brown sugar. Melt butter. Add all other cake ingredients and mix thoroughly. Pour batter into cake pan and sprinkle with streusel mix. Bake. Do not open oven while cake is baking Bake approx. 40 minutes. Check for doneness. When cake is done, remove from oven and cool 10 minutes. While cake is cooling run a table knife around the inside edge of the cake pan. After 10 minutes, plate cake and drizzle with icing. Then sprinkle with chopped peanuts. Enjoy!

Streusel-peanutbutter cake

What is a streusel? and when do you mix it into the recipe ? it's not clear from your instructions.

Hi,
Streusel is a topping that you prepare (mix) and place atop the batter. Then bake. The streusel bakes on top of the batter and creates a sweet, crisp topping on your cake or muffins. This type of topping is very common in European and American breakfast cakes and bars (cookie bars)
The streusel for the peanut butter cake is especially good because I added peanuts to the recipe. It is listed near the top of the recipe.
You can go online and find very helpful recipes for making peanut butter online. All you need is a food processor or a Cuisinart, some peanut oil, peanuts ant a bit of salt.
