Shaping the rolls
I clicked on the link you provided, the image reminded me of Kaiser rolls. I cannot be sure... but it's worth trying. Here's a link to a previous discussion about shaping Kaiser rolls.

You don't have to shape yours like a Kaiser roll but that will be a good place to start. Just keep playing with it until you're happy with the shape.
