We made your pita recipe tonight, but they didn't puff in the oven. Any ideas?? We had some pockets but not a full puff! They were still very tasty though!Maria
The first two guesses would be not rolling them thin enough or not having a hot enough baking surface, but I don't know for sure.
I was taught to be careful not to over-roll the pitas to ensure a good poof. I try to just give them a few passes with the rolling pin, and don't stretch them at all, just handle gently when transferring them to the peel and oven. I have pretty good luck with this method--though ocassionally you have a goofy one in the batch!
Thank you for your tips. The last two we baked actually puffed and we didnt roll them out as much, so that must be the trick!! Thanks!! They were very tasty!!
