Spiral Mixers: Can they be used to mix enriched breads?


Greetings,

I am curious to know if a spiral mixer can be used to mix dough that uses eggs/sugar/honey/etc...such items like sweet breads, crossaints, brioche, etc...

Sure!

I don't make crossaints, but brioche is similar to challah, which I make all the time.  No problem here. 

Just as with any baking, you have to know how you want the dough to look and feel and use your tools to achieve that.
