KAF Ancient Grains experience?
I just tried the "Ancient Grains" recipe from KAF using the Ancient Grains flour mix (contains quinoa, amaranth, millet and sorghum) and even though the recipe called for whole wheat flour, bread flour and vital wheat gluten I managed to get a brick of a loaf with a pretty hideous taste. I was careful with my water temperature and the yeast, but was very non-plussed about the rise (ok, but not as good as I had wanted) and I now have a loaf of "bread" that would probably make good animal fodder. Has anyone else tried this mix and recipe? I usually have pretty good luck with KAF recipes, but this one was a major miss.
