What do you call the "mold" bakeware piece for subway/grinder/hoagie rolls?

Hi Everyone!

I am extremely new to cooking. I have been trying to make some grinder/subway/hoagie rolls and have been trying different recipies. I want to purchase a bakeware product online that is like a "mold" for those rolls. (For example, if you go to the Subway restaurant and watch the person take the rolls out of the oven ... there is this red silicone "mold" piece that all of the rolls are on top of and they flip that flimsy piece over and all the rolls fall out). The piece looks like it is made of silicon, and fits several rolls in there (it's like a U shape thats 1 or 2 feet long). I went to the chef store nearby and I found a baguette "mold" but it doesn't really do the trick.

Moral of the story is I want to buy those molds like Subway uses, but I don't know what they are called and have been searching for an hour to no avail. Any help would be really appreciated!!

I think you're going to find

I think you're going to find that those molds are specially made for Subway and other sub shops. Short of somehow finagling one from them, the baguette pans are probably the best you're going to do.

Chicago Metallic does make a Sub Roll pan, and it is very similar to the baguette pans, but probably even less similar to the Subway mold(appears flatter).

These are both perforated pans. There are the non perfoated baguette pans though.

I've been looking for a while myself for a sub mold, but will have to do with making "perfectly decent" buns on a sheet pan.

The problem with silicone molds is that silicone rubber is an excellent insulator, and for a bread/cake pan you want a thermal conductor. I bought a fancy rose shaped silicone cake pan once, but the inside of the cake wouldn't even start to set up by the time the top was over done and getting burnt.

hey the molds you are looking for are made by Silpat.

 

i found some actual subway molds on ebay, i am guessing that you probably cant buy the actual ones from a store or anything, but i havent really researched too much.

they are a silicone/glass mixture i believe, and perforated.
