Submitted by kimmer on December 27, 2009 - 8:06pm Intro (and I love this site!!)I first logged in to this site yesterday and I made my first loaf of rustic bread tonight. I used the Lesson One recipe, but swapped out some of the AP for more whole wheat flour, and added some soaked steel-cut oats and wheat berries. It is sooooo good!! I'm not the biggest bread eater (unless it's fresh) and I love breads that have more texture. I've been considering a no-knead but found this site and decided to start with a (rushed) poolish. I started everything at 4:30 and took a loaf out of the oven at 8:45. The best home-cooked loaf I've ever made. Thanks so much!!!
