Happy Channukah

Merry Christmas and Happy Channukah,

In my first post to this addictively delicious site, may I ask folks out there for recipes for sufganiyot, or yeasted doughnuts, typically served on Channukah?  I would especially appreciate recipes that do not contain dairy products.  If anybody has a sourdough version that you like, I would love to try it.  Come on guys, we have 8 days so let the games begin...

If you have a good parve challah recipe, that will make nice doughnuts.  I fry the dough and then roll in cinnamon sugar.  Yum!

Just don't make the same mistake I did the first time.  I decided to make "doughnut holes" instead of doughnuts, and they were bigger than they should have been.  They were beautifully cooked on the outside but inside, a raw, gooey mess.  YUCK!  If I'd tried to cook until done, it would have burned the outside. 

Doughnut shapes are there for a reason--so that the hot oil can penetrate every part.  If you make holes instead, keep them small.  I bought both large and  small circular dough cutters so I can make real doughnuts this time!

I will be using this recipe for the first time tomorrow tomake sufganiyot for 30people. There are some reviews on the site that might be helpful.

I think they turned out fine.  I have never made or ate them ebfore, so have nothing to compare with.  But they baked through, puffed up nicely and everyone was happy with them.  Kroha
