Hello! My name is Nicole and I just graduated from the Texas Culinary Academy. I originally went because I wanted to make cakes, but I fell in love with bread. Our bread class was only three weeks long and I feel like I have so much more to learn! I am excited to get to know everyone here and to share with you my adventures in baking :)

If you wish to continue your formal baking education, do take a look at the professional classes offered by KAF or the courses offered by SFBI.

Welcome to The Fresh Loaf.  Keep on learning.  I have been baking bread for twenty years and I am still learning.  Sourdough is my favorite method of making bread.  Fortunately, I am a patient man, because that really requires patience!

I'm new to this site. Coming back to bread baking after an absence, quite frankly, because life got too busy! Now I'll have a stand mixer to shorten kneading time and, to be honest, I find the process of making bread to be meditative. So here I am. My oldest in college, my baby now a teen. I'm looking for a 'real' job to pay tuitions and would love to bake breads on weekends for the week. Hubby has promised to try what I bake (though he isn't big on wheat breads) and the kids are excited too.


My mother-in-law has told me of HER mother's baking days..Thursdays..all day long, every Thursday she would religously would bake her pies, breads and cakes for the family!!!! Can you imagine, all this before the days of clothes washing machines, never mind stand mixers!


Anyway, got a little off track there; really look forward to learning the tricks of the trade from you passionate bread bakers! Seems like a GREAT FORUM and WONDERFUL SITE.
