Does anyone know where I can get a Pullman Loaf pan that is LARGER than 4" deep and 4" wide? I am hoping for something near 5 inches.
I've never seen one of that size. What makes you think it exists?
most of the japanese bakeries around here bake shoku-pan that is larger, probably between 4.5 to 4.75 inches. no one i have spoken to in the bakeries actually bakes the bread, so they don't know anything about the pans.
I have such a lidded pan that measures 17 inches long, 5 inches wide and 5 inches deep. Makes a 5 lb loaf. Got it at a restaurant supply joint in Toronto. It's French, black metal, no coating. If you get your hands on one, I have a recipe around here some place or other.
