soft crust sourdough bread

Could anyone tell me how to make soft crust sourdough bread? I bought a loaf once from a bake sale and the lady said she used potatoe flakes to feed it. But her loaf was so soft and airy and light, even the crust. I have tried  to make it but it comes out heavy and hard crusted. Thanks for any help....  Paula
