Italian Bread, from BBA Challenge

Since I posted last week an inquiry about how to change recipes from kneading to folding, I would like to show you my results with the

Italian Bread from BBA Challenge. I liked the results much better, and of course, it is much nicer to handle the dough than use the Kitchen Aid...

When the BBA challenge gives you a breather, try this with biga naturale (sourdough starter) rather than the yeasted biga. It's really great as a long loaf and as rolls for subs. (As you may recall from the great meatball sub fest.)

It is true that the "challenge" interferes a little with the huge list of breads I want to make. But, it's fun to try breads I would not normally think of doing.
