Submitted by 575 watt stand mixer on August 24, 2009 - 7:37am Kolache dough formulaI was visiting some friends in Houston over the weekend and was introduced to the Kolache-- which is a kind of meat stuffed bread. There is a fruit filled variety, but I wasn't able to sample any of those.
Anyway, the bread dough seemed to be a pretty regular, enriched white bread, maybe with a hint of sweetness and a coat of butter on the outside. I was going to try making kolache with the white bread formula from the BBA, but thought I'd poll you guys in case someone has a kolache specific formula. I was able to find some recipies by volume, but I'd really prefer a percentage formula since there are too many assumptions to go wrong when converting a recipe from volume to weight.

I am not familar with the meat filled kolaches but my grandmothers use to make them. I have posted a recipe that approximates their recipe on my private blog here. Some photos of the forming for them are here.

klobasnek are the meat filled variety of Kolaches, but here in Texas both fruit and meat go under the name kolache.
