While I was there I picked up some beautiful dark green zucchinis and immediately thought of the wonderful spicy taste of fresh zucchini bread. This recipe has been in my family for as long as I can remember - a family friend shared it with my mother ages ago. Hope you enjoy! Zucchini Quick Bread Preheat oven to 350. Ingrediants: 1. In a large bowl, beat the eggs until frothy. 4. Sift together and add the flour, spices, salt, baking soda and baking powder. Generally, I tend to ignore the spice measurements and just dump them straight in. I love a strong spice flavor. When I make this bread, the dry ingredient mixture tends to be a light brown and very fragrant.

I make almost the same recipe, 8 loaves worth in the freezer. I also throw in orange zest, craisins, chopped candied ginger or whatever type of dried fruit I happen to have. Vary vanilla with orange extract. I want to try your version next time., your's is spicier, yum. I use 2 t cinnamon and 1/2 t cloves.
I also found a yeasted whole wheat recipe that has zucchini, carrot, red onion, bell pepper, garlic, pumpkin and sunflower seeds that I want to try tomorrow.

Thanks for posting this recipe! There are lovely local zucchinis available where I live as well. Plus I make a quick bread something like every other week so I'll have to add this one to the list.

Hi,
I made the same recipe last week, but replaced roughly 80% of the oil with unsweetened applesauce. It turned out great, didn't fall in the middle as is predicted in the recipe (and most of the pics) and didn't suffer in taste or texture, IMO.
I like the suggested additions, Paddyscake! Now if only my hubby hadn't thrown out the big tupperware of candied orange peel he thought looked "too moist"....
