90 Proof Cake

An Internet friend was kind enough to give me some starter for the 90 proof cake plus instructions.  I,unfortuantley, misplaced the instructions and I am hoping someone on this forum might have them.  The cake is made with pineapple,peaches and charries added to the starter over a 30 day period.

Does the 90-proof refer to alcohol content?

The fruit is fermented for 30 days, much in the manner of a brandy.


It starts with a  cup and a half of the starter (liquid) and a can of sliced peaches and 2.5 cups of sugar.


Stir every day for 10 days.  Add a can of crushed pineapple and 2.5 cups of sugar.


Stir every day for 10 days.  Add 2 jars of Marischino cherries and 2.5 cups of sugar.


Stir every day for 10 days.


Strain the fruit.


Use one third of the fruit and a yellow cake mix and a small box of instant vanilla pudding, 4 eggs, oil, one cup of shredded coconut and a cup of chopped nuts.


I bake in a bundt pan or divide a batch into mini pans to make individual cakes.


There is enough fruit for 3 batches.


Divide the juice (starter) into 1.5 cup portions and share with friends, retaining one for your next batch.


When you mix the cake, sample one of the cherries.  You will find out quickly where it got its name!

Yes, here in the South, the starter is well known as "Friendship Fruit" .


That should make for a 'Fruitful'  internet search...... ;))
