Sourdough Cookies?

Just thought I'd share my opinion on the oatmeal raisin cookies that incorporate extra sourdough.  They were a little bit yucky to my taste - but my kids and neighbour loved them.  What I found yucky was the distinctly odd buttermilky sour flavour in the cookie, and not rich/chewy enough despite the cup of butter (recipe called for shortening but I subbed).

There is a discard recipe I love, the KA flour discard waffles - they were super with ice cream!

Hi Celestica,

I make gluten free sourdough breads as well as teach other gluten intolerant people to make them. I am always experimenting with recipes and have, on a number of occasions, tried to make a sourdough sweet bread. I find the sour taste most definitely "competes" with any mild sweetness or fruit taste present. Sometimes I use quinoa flour and the bitterness of that plus the sourness of the sourdough is hard for any sweetener to balance out.

I have found that using a starter on the less sour side works well, coupled with using a banana and a bit of stevia.

is your peanut butter sourdough cookie recipe posted somewhere? I'm interested to see if I can convert it to gluten free, dairy free...
